Greek Chicken Gyro
The secret to a perfect pita sandwich is properly toasting your pita bread and keeping your fillings in proportion. In my house, “properly toasted” means melting butter in a pan and fluffing up your pita. Even with the fluffing, this delicious lunch comes together in less than 15 minutes if your chicken is already cooked!
Chicken tenders
Greek seasoning
Olive oil
Salt and pepper
Cucumbers
Cherry tomatoes
Avocado
Kalamata olives
Feta cheese
Preheat oven to 425 degrees F. Combine 2 tablespoons of greek seasoning with ¼ cup olive oil in a shallow bowl. Mix well, then coat each chicken tender in spice mixture and sprinkle with salt. Place on a sheet pan. Bake tenders for 16 minutes, flipping halfway through.
For 1 pita sandwich: slice 1 chicken tender thinly, 2 cherry tomatoes, 2 slices of cucumbers (sliced in quarters), and chop 4 kalamata olives. Slice ¼ of an avocado.
Toast a pita by placing 1 tablespoon of butter in a saucepan over medium heat. Toast pita for 2.5 minutes on each side, or until pita is starting to “fluff.”
Once pita is done cooking, layer with avocado, chicken, cucumber, cherry tomatoes, olives and sprinkle with salt and feta cheese to taste.
