This soup is a bowl of wellness. Garlic, chicken broth, spinach and eggs combine in less than 5 minutes for a nourishing bowl of warmth and nutrients. A perfect soup for an afternoon when you’re feeling under the weather and don’t have much energy but are craving a healthy boost.
Bring 2 cups of chicken stock to a bowl then lower to medium low heat.
Slice ½ stalk of green garlic into thin circles. Add ¾ of the chopped garlic to the broth with 2 teaspoons soy sauce and 1 teaspoon sesame oil.
While broth is simmering crack 2 eggs into a bowl and whisk with a fork. Add 1 cup of spinach to broth, then slowly drizzle in your egg while spinning the broth in a circle. Once spinach is wilted (~2 minutes), pour soup into bowl and top with fresh green garlic. Wait a few minutes for broth to cool, then slurp away!
