Truffled Turnip Fries
The great thing about cooking veggie forward foods is that vegetables are FRUGAL! By reducing you protein and upping your vegetable intake, you not only get more nutrients, you save money! You could save it indefinitely, or you could invest in some decadence, like truffle oil. Truffle oil instantly elevates earthy ingredients like turnips in this dish. Although it might be pricey (I picked my very small bottle up for $12.99), it will last because you really don’t need too much to add flavor. Invest in the little things that make you smile, and your returns will be exponential.
Gold Ball Turnips
Olive Oil
Salt
Pepper
Garlic Powder
Truffle Oil
Parmesan
Preheat oven to 425 degrees F.
Peel Turnips and slice into french fry sized pieces. Toss with olive oil, and generous shakes of salt, pepper and garlic powder. Spread EVENLY on a sheet pan. No two pieces should be touching.
Roast for 15 minutes. Flip, and roast for 15 minutes more.
Up the heat of your oven to the “broil setting”, and set a timer for 1 minute. Check every minute until turnips have started to crisp and brown but aren’t burned.
Let cool for 2-3 minutes on the sheet pan, then toss in a bowl with a drizzle of truffle oil and some freshly grated Parmesan. Enjoy!
