Carrot Fries with Dilly Ranch
If you love sweet potato fries, you will certainly love carrot fries. They are sweet and savory, and pair perfectly with homemade ranch dressing. Make sure that when you slice your carrots, you make them a consistent size and space evenly on the sheet pan. If the carrots are touching they be mushy instead of crispy!
Carrots
Salted butter
Garlic powder
Salt
Mayonnaise
White wine vinegar
Garlic
Parsley
Dill
Preheat oven to 425 degrees F.
Peel and slice your carrots very thinly. Toss generously with melted butter, salt, and garlic powder. Space evenly on your sheet pan, and roast for 20 minutes, toss, then roast for 10-20 minutes more until carrots are crispy.
To make your ranch dressing, combine ¾ cup sour cream, ½ cup mayonnaise, 2 tablespoons white wine vinegar, ½ tablespoon minced garlic, ½ tablespoon parsley (fresh or dried), ¾ tablespoon dill (fresh or dried), and several healthy grinds of salt to taste.
